Pasta Machine Buying Guide: Questions to Ask Before You Order

Two quotations for "a pasta machine" can describe very different equipment. These questions help you compare like with like.

Capacity

• What is the rated output, in kg per hour, for my shape? Output differs between shapes and dough recipes.
• Is that wet output at the die, or dried, packed output? Fresh pasta loses weight as it dries.
• What utilisation is realistic? Changeovers, cleaning and stoppages mean real output is lower than rated output.

Dies and shapes

• Which dies are included, and in what material and finish?
• Can I get additional shapes later, and are replacement inserts available?
• Who supplies dies if the machine maker stops trading? A die maker who can work from your machine’s die-seat dimensions protects you here.

Power, space and utilities

• Total connected load, voltage and phase.
• Floor area, height and weight, including dryers and conveyors.
• Water requirements and any compressed air.

Drying and the rest of the line

An extruder alone does not make shelf-stable pasta. Ask what drying capacity is included, how temperature and humidity are controlled, and what cutting, cooling and packing equipment you will need.

Materials and hygiene

Ask which parts touch the food and what they are made of, and how easily the machine can be cleaned.

Commissioning, training and support

• Is installation and commissioning included?
• Will your operators be trained?
• What is the warranty, and how quickly are spares supplied?
