A macaroni die sits at the head of the extruder. Dough is pressed through each insert, where a central pin forms the hollow tube; the insert geometry sets the diameter, wall thickness and curve of the macaroni.
R.N. supplies macaroni dies as a plate fitted with replaceable inserts, made to suit your extruder. Inserts can be plain or lined with PTFE (Teflon). Lined inserts generally give a smoother, glossier surface; unlined metal gives a rougher, matt surface that holds sauce. The photograph shows an R.N. die plate fitted with lined inserts.

Dies are made to fit the die head of your extruder. Share the machine make and model, the die-seat diameter and thickness and the clamping arrangement — or send your existing die or a drawing — so the new die matches your machine.
Plate size, insert count, insert size and lined or unlined inserts are specified per order.
General guidance: clean the die after every production run, before dough dries inside the openings — soak in warm water and clear residue with soft, non-metallic tools, taking particular care not to scratch PTFE linings. Dry thoroughly before storage. Inspect inserts regularly for wear or damaged linings and replace individual inserts when needed. Always follow any care instructions supplied with your die.
